Abstract
Nadilla Kamilatunnisa. B. 1710232. Physicochemical Characteristics and Antioxidant Activity of Local Forest Honey in Tasikmalaya Regency. Supervised by Sri Rejeki Retna Pertiwi and Intan Kusumaningrum. Honey is a natural liquid that generally has a sweet taste produced by honey bees from plant flower extracts (floral nectar) or other parts of plants (extra floral). Tasikmalaya Regency is one of the areas with potential as forest honey-producing areas, including in the Pancatengah, Karangnunggal, Cibalong, Bojongasih and Bojonggambir. Forest honey in Tasikmalaya Regency is expected to improve its quality to become a superior product, so research is needed on the physicochemical characteristics and antioxidant activity of local forest honey in Tasikmalaya Regency. This study aims to study the physicochemical characteristics and antioxidant activity of different forest areas. The method used is RAL (Completely Randomized Design) with 1 factor, namely the forest honey-producing area in Tasikmalaya Regency with 5 levels of treatment. The results of the analysis show that local forest honey in Tasikmalaya Regency has physicochemical characteristics in the form of total acidity, specific gravity and reducing sugar that meet the standards as well as water content and refractive index characters that do not meet SNI Honey 8664-2018, so it can be said that local forest honey in Tasikmalaya Regency is still requires proper post-harvest handling to get the best quality honey. The best treatment selected was Bojongasih honey with dark brown colour; a moisture content of 25,61%; reducing sugar content of 74.93%; total acidity 44.25 mL NaOH/Kg; specific gravity 1.38 g/mL; refractive index 1, 4719° and the best antioxidant activity was honey from Pancatengah with an IC50 value of 11.545 μg/mL
